Quick and easy healthy dinner idea: shrimps, rice & avocado

If you are looking for an idea for an appetizing and quick dinner to prepare, here is a simple option that can be a very good dinner option as part of your healthy eating habits.

Shrimps: just defrost frozen shrimps. In the meantime, brown a clove of garlic in a pan with extra virgin olive oil. Then add the shrimps and cook for a few minutes. A couple of minutes before the finishing cooking, add some chopped parsley. In order to be healthy, pay attention that the list of ingredients on the shrimp box does include ingredients that you don’t understand, and I suggest not to add salt during the cooking. Often frozen shrimps can be already a bit salty without the need to add extra salt.

Rice: In this case I cooked the rice in my rice cooker, and just seasoned it with extra virgin olive oil and a bit of black pepper. As always, in order to maximize the healthiness and flavor of any cereals, the best is to choose brown rice.
